Strawberry Banana Muffins

2 cup flour                                                      2 eggs

1 tsp baking soda                                           2 tsp vanilla

1/2 tsp salt                                                       2 medium ripe bananas, mashed

1/2 cup butter                                                  1 cup fresh strawberries, sliced (or cubed)


In a bowl, combine flour and baking soda.

In a large mixing bowl, cream butter and sugar. Add eggs and vanilla. Mix well.

Beat in bananas.

Gradually add the dry ingredients, beating just until combined.

Fold in strawberries.

Scoop into muffin tins.

Bake at 350 degrees for 25-30 minutes. Cool for 10 minutes before removing from pans to wire racks.


This recipe is delicious!!! It’s not officially in any of my Amish cookbooks. I could not find a recipe like this and I wanted to try a banana/strawberry muffin. So I mixed a few different recipes together and, amazingly, they turned out delicious on the first try!!!
