Velvet Chocolate Cake

This was a super simple cake to make (I turned it into cupcakes and it made roughly 30). Tastes amazing!!

2 cups cake flour                                     1/2 cup cocoa

1/2 tsp salt                                                1 cup cold water

2 cups brown sugar                                1 tsp vanilla

1/2 cup shortening                                 1 tsp soda dissolved in 2 tbsp boiling water

2 well-beaten eggs                                  1 cup chopped nuts may be added

Sift flour once, measure and mix with salt and cocoa and sift again. Cream shortening, add sugar gradually, beating thoroughly after each addition. Add vanilla, then well-beaten eggs and beat until fluffy. Beat in flour mixture alternately with the water. Add the dissolved soda and beat well. Bake in layer cake pans 350 degrees for 30-35 minutes.

Mandy’s tips:

1 – I used regular flour, instead of cake flour.

2 – I used butter in place of shortening.

3 – I did not use chopped nuts in my recipe.

4 – Because I was making cupcakes and not a cake, this only took 20-25 minutes in the oven at 350 degrees.

*The Amish Cooking cookbook has hundreds (maybe thousands? I haven’t counted and don’t plan on it..) of recipes and no names were listed as to whom to give credit to for the actual individual recipes. Therefore, I can not give credit to the proper person for this super easy and delicious cake!
