Butter Cookies (and Frosting)

1 cup butter                                     1 cup sugar

1 egg                                                  2 tbsp orange juice

1 tbsp vanilla                                   2 1/2 cups flour

1 tsp baking powder

Combine butter, sugar and egg. Beat at medium speed until creamy. Add orange juice and vanilla. Continue beating until well mixed. Add flour and baking powder, beat at low-speed until mixed.

Divide dough into thirds. Wrap and refrigerate for 2-3 hours.

Preheat oven to 400 degrees. Roll out dough on floured surface (1/8 – 1/4 inch thickness – only pull out one roll of dough at a time and leave the remaining in the fridge. Cut and place 1 inch apart on cookie sheets. Bake 6 – 10 minutes. Let cookies cool 1 minute on cookie sheet.

 

FROSTING:

3 cups powdered sugar                  1/3 cup butter

1 tsp vanilla                                      1-2 tbsp milk

Combine sugar, butter and vanilla. Beat at low-speed. Gradually add milk until desired consistency is achieved. Add food coloring as needed/wanted.

 

* This recipe was given to me by my mom – not from the Amish Cooking cookbook, but still very yummy. A great recipe for Christmas cut-out cookies.
